胡桃南瓜花椰菜“Risotto”

胡桃南瓜花椰菜“意大利调味饭”
2杯胡桃南瓜,去皮切成1英寸的小块
1-2汤匙特级初榨橄榄油
2杯米饭花椰菜
1个中等大小的甜洋葱,切碎
2汤匙特级初榨橄榄油或酥油
3瓣蒜末
¾杯蔬菜汤,分开
¼杯椰奶
2汤匙营养酵母
1汤匙切碎的鼠尾草
海盐和胡椒粉,调味

将烤箱预热到425F。 将胡桃南瓜放在衬有羊皮纸的烤盘上。用橄榄油淋上毛毛雨,然后用盐和胡椒粉调味。扔去外套。烤15-20分钟或直到变软。一旦胡桃南瓜烤完并稍微冷却。烘烤南瓜时,将菜花切成小花。将小花放在食品加工机的碗中,并脉动直至花椰菜大小与大米相同。

用中火将大锅中的橄榄油或酥油加热。加入洋葱并煮2-3分钟,然后加入大蒜。加入“大米”花椰菜,煮3-4分钟。接下来,加入1/2杯蔬菜汤,搅拌直至吸收液体。吸收后,再添加1/4杯肉汤,搅拌直至吸收。下一个。加入1/4杯椰奶并搅拌直至吸收液体。煮至嫩。加入营养酵母并搅拌。加入烤胡桃南瓜,鼠尾草,搅拌混合。调味再煮2分钟。

柠檬香草扁豆沙拉配新鲜芝麻菜
1杯干扁豆
1个鲜榨柠檬
2汤匙白香醋
2瓣大蒜,压碎
1茶匙新鲜迷迭香
1茶匙新鲜百里香
½茶匙小茴香
½茶匙海盐
新鲜的胡椒粉调味
¼杯特级初榨橄榄油
1杯葡萄西红柿,减半
1个温室黄瓜,去皮,去籽,切丁
1/2甜洋葱,切成薄片
2杯新鲜的花园芝麻菜
1/2杯碎奶酪或山羊奶酪(可选)

将冲洗过的扁豆放在一个大锅中,并用水盖住扁豆上方2英寸。烧开,盖上锅盖,减少热量,小火煮20分钟或直到变软。排水好。

在一个单独的碗中,将白香醋,柠檬汁,大蒜,迷迭香,百里香,小茴香,盐和胡椒粉放入一个中等大小的碗中,搅拌打匀。在橄榄油中慢慢搅拌。

在一个大碗里,把香醋淋在煮熟的扁豆上,然后轻轻地扔。加入西红柿,黄瓜,洋葱,芝麻菜,然后搅拌。上面放上碎奶酪。

烤花椰菜鹰嘴豆泥
1头花椰菜,切成小花
3汤匙特级初榨橄榄油,分为
¼茶匙海盐
新鲜的胡椒粉调味
3瓣大蒜去皮
¼杯芝麻酱
½新鲜柠檬,榨干
½茶匙小茴香
¼茶匙辣椒
新鲜切碎的香菜装饰
食用花卉装饰

将烤箱预热至425°。在一个大的搅拌碗中,将菜花小花和2汤匙特级初榨橄榄油,海盐和胡椒粉一起扔。将小花放在衬有羊皮纸的烤盘上,烘烤20分钟或直至变软变金黄。

在食品加工机中,用S形刀片切碎蒜瓣。加入烤花椰菜,再加入芝麻酱,剩余的橄榄油,柠檬汁,小茴香和卡宴辣椒,然后混合。加入额外的盐和胡椒粉调味。将鹰嘴豆泥转移到食用碗中。加入切碎的香菜和食用花卉。与最喜欢的皮塔饼和/或新鲜的生菜搭配。

三色藜麦沙拉配烤玉米和西红柿
1杯三色藜麦
2杯水
4汤匙特级初榨橄榄油,分开
1品脱葡萄番茄
2耳新鲜玉米,切掉玉米芯
1酸橙,榨汁
1/2茶匙盐
1/2茶匙胡椒粉
2杯婴儿芝麻菜
1/4杯碎奶酪或山羊奶酪

使用细筛网冲洗藜麦。将2杯水和1杯藜麦烧开。煮沸后,盖上盖子并减少热量,再煮12分钟,直到所有水分被吸收为止。
将烤箱预热至400°。将1品脱的葡萄西红柿放在衬有羊皮纸的有边框的平底锅上,并淋上特级初榨橄榄油,然后加盐调味。烤15分钟,直到西红柿弹出并起皱。搁置。
切掉玉米芯的玉米粒。在炒锅中加热1汤匙特级初榨橄榄油。加入玉米粒和少许盐,然后炒3-4分钟。搁置。
将煮熟的藜麦转移到一个大的搅拌碗中,并加入2汤匙特级初榨橄榄油,酸橙汁细雨,并加入盐和胡椒粉调味并搅拌。加入烤西红柿,炒玉米和新鲜的芝麻菜叶,轻轻地折叠在一起直至混合。顶级藜麦搭配羊乳酪。

Use your food processor to rice your the cauliflower! This cuts down on the moisture content that frozen riced cauliflower seems to have when mimicking the rice.

My favorite is Spike seasoning with a little extra flair of red chili flakes!  Pop in the oven for 15-20 minutes on 400 depending on how tender you like your broccoli.

I always recommend buying broccoli heads and cutting them when you are ready to use.  Cut them in long spears with the stems as it will help maintain freshness and vitality that is locked inside.  Plus, the stalks of broccoli are full of nutrients and fiber as well!  So yum.

This year’s cranberry win goes to a cup of sweet red wine instead of plain water or juice to make my holiday cranberry sauce pop! 

🍷With a sweet red wine, I used way less turbanado sugar (only 3 Tablespoons! ) to find my favorite sweet/ tart balance in this significant holiday tradition.  I used allspice to add to the party and a slight squeeze of an orange with a twist of an orange peel to finish with a hint of its essence. 🌿

After Thanksgiving, leftover cranberries now make it to the charcuterie  board to pair with some lovely cheeses.

No need to sell ya on the zoodles made  from zucchini and the roasted Roma’s blended into a sauce. Divine. 🌿
